Grease traps form part of a restaurant’s sewer system. They stop thick grease from flowing into and clogging the municipal or city sewer system. If these tanks are not working properly, then there can be a danger of a backup or backflow happening. This usually means extra cost in terms of fines and loss in revenue if the problem results in the closure of the restaurant.

Unfortunately, there are times when employees tasked to clean the grease trap of an establishment are not doing it properly or regularly. Only when a problem occurs do they remember to clean it, and by that time the damage has already been done.

Why grease traps need to be service and cleaned

One major cause of an untimely commercial septic system failure is the lack of pumping and cleaning of the grease trap.

When the grease depth reaches at least 25% of the depth of the water in the grease tank, the grease needs to be pumped out already. For example when grease is 1 foot deep in a tank that is 4 feet deep, the grease floating on top of the tank should already be pumped out including the sludge at the bottom of the tank.

Grease traps should also be cleaned and the grease deposit pumped out when the water temperature in the tank is more than 110⁰. When the water in the tank is too hot, the grease continues to be stay on top of the water and could flow to the septic tank. If grease reaches the drain field it could cause damage to this facility.

Several municipal health departments require a twice a year complete pumping of the grease trap even if the grease deposit has not reached the 25% level.

Rooter-Man’s expert suggestion to property owners is that they should not leave the pumping of grease tanks to the establishments (restaurants) leasing their property. Some cases handled by us at Rooter-Man involved failure in the septic system where the responsibility of pumping and cleaning a grease tank is left to the lessee. The restaurant owners failed to comply with municipal health regulations and/ or the requirement of the lease for the regular and proper pumping of the grease trap. This resulted in damage to the leach or drain field. When this happens, the restaurant cannot operate and the property owner won’t be paid rent.

The procedure of cleaning and servicing a grease trap starts with the total pumping-out of all grease, sludge and grease-laden water.
